The distillery was established in 2009 and has produced aquavit, absinth, marc and brandy. Brandy and marc are made from grapes from the distillery’s own vineyards.
The focus today is on GIN!
The distillery is located close to Fredensborg with land down to Lake Esrum and has its own vineyards. The distillation is carried out with handmade copper column distillation apparatus originating from Germany. The distillery has equipment for bottling onsite and houses a high-tech laboratory with a gas chromograph amongst other things, which is used for quality assurance.
Henrik Elsner is a bioorganic chemist and the master distiller at the distillery. Henrik Elsner’s vision is to produce authentic spirits by combining excellent craftsmanship with solid scientific principles.
Today, six different types of gin are produced, all based on the same three botanicals: juniper berries, coriander seeds and Funen carrots. The gins are compound gins, as each botanical is distilled separately and then blended. The alcohol is a grain alcohol based on wheat. Also used are extracts (macerates) of juniper berries and purple carrots.
The three botanicals are distilled in different ways to achieve a perfect distillate with the best possible nose and taste. Coriander seeds in particular have many undesirable taste components that are removed during the distillation process.
The juniper berries come from Macedonia, where they grow in the wild, while the coriander seeds mainly come from the Ukraine and Bulgaria. Carrots from Lammefjorden in Denmark are harvested at the end of July, and they are distilled within 24 hours to achieve the fresh carrot taste.
The individual production methods provide extraordinary precision and ensure the types of gin each have their own personal taste, nose and colour.
All the types of gin have a relatively high alcohol percentage, as they contain substantial amounts of essential juniper oils. The oils are difficult to dissolve in water, and more alcohol is therefore required so they can be kept dissolved in the gin for a long time.
